Aloo Aur Anday Ki Karahi

Ingredients

 1: oil 1/2 cup

 2: onion 1 large (chopped)

 3: tomatoes 4 medium (sliced)

 4: ginger & garlic paste 1 tbsp

 5: cumin seeds 1 tsp (heaped) (dry roasted & crushed)

 6: salt 1 & 1/2 tsp

 7: red chilli powder 1 & 1/2 tsp

 8: turmeric 1/2 tsp

 9: coriander seeds 1 tsp (heaped) (dry roasted & crushed)

 10: water 1 cup

 11: potatoes 1/2 kg

 12: water 1 cup

 13: eggs 12 (beaten)

 14: green chilli 4 (chopped)

 15: dry fenugreek leaves 1 tbsp

 16: coriander leaves handful

 17: garam masala powder 1 tsp

Instructions

  1. 1: heat oil add onion and fry till gets soft on high flame.

     2: add tomatoes, ginger & garlic paste, cumin seeds, salt, red chilli, turmeric, coriander seeds, water mix and cook till the tomatoes reduce and oil comes on surface, on medium flame.

     3: now add the potatoes, water mix cover and cook on medium flame till the potatoes are tender and oil comes on the surface.

     4: then add the beaten egg, mix well till the eggs gets scrambled.

     5: add fenugreek leaves, green chilli, coriander leaves, garam masala mix well and simmer on low flame for 5 to 6 minutes.

     6: serve hot with roti, naan, paratha.
