Achari Korma

Ingredients

 To Boil Meat:

 1: mutton 1 kg

 2: water 3 glass

 3: turmeric 1/4 tsp

 4: salt 1/2 tsp

 

 For Curry:

 1: oil 1/2 cup

 2: cumin seeds 1 & 1/2 tsp

 3: mustard seeds 1 tsp

 4: nigella seeds 1tsp

 5: button red chilli 10

 6: cloves 10

 7: onions 2 large (grind)

 8: ginger & garlic paste 1 & 1/2 tbsp

 9: salt 1 tsp

10: red chilli powder 1 & 1/2 tsp

11: jaggery 2 tbsp (or) 1 tbsp

13: yogurt 1 cup

14: green chilli 4

Instructions

  1.  1: in a pot add meat, water, salt, turmeric and boil the meat till gets tender and then separate the stock and meat.

     2: heat oil add cumin seeds, mustard seeds, nigella seeds, button red chilli, cloves, onions, ginger & garlic paste fry on high flame till changes colour.

     3: then add boiled meat, salt, red chilli, lemon juice, jaggery, meat stock remaining or can add water 1 cup mix well  and cook on low to medium flame for 15 minutes and the oil comes on surface.

     4: now add the yogurt mix well and cook on high flame till the oil comes on surface.

     5: add a few green chilli mix.

     6: serve hot with naan, roti.
