Achari Baingan Gosht

Ingredients

 1: oil 3/4 cup

 2: black mustard seeds 1 tsp (rai dana)

 3: button red chilli 8 to 10

 4: onions 2 medium (grind)

 5: ginger & garlic paste 1 & 1/2 tbsp

 6: mutton meat 1 kg

 7: red chilli powder 1 & 1/2 tsp

 8: turmeric 1/2 tsp

 9: salt 1 & 1/2 tsp

10: crushed red chilli 1 tsp

11: cumin seeds 1 & 1/2 tbsp (crushed)

12: coriander seeds 1 & 1/2 tbsp (crushed)

13: curry leaves 1 tbsp (or fresh leaves) 15 to 20

14: fennel seeds 2 tsp

15: fenugreek seeds 1 tsp (methi dana)

16: yogurt 1 cup

17: nigella 1 tsp (kalongi)

18: eggplant 500g (baingan)

19: green chilli 7

20: fresh coriander 1 small bunch

21: garam masala powder 1/2 tsp

Instructions

  1. 1: heat oil add mustard seeds, dry red chili, onions, ginger & garlic paste and fry on high flame till gets golden.

     2: now add meat, red chili powder, turmeric, salt, crushed red chili, cumin, corainder, curry leaves, fennel seeds, fenugreek leaves mix well and cook on high flame for 4 minutes.

     3: add yogurt and cook on high flame for 8 minutes.

     4: then add water 1 & 1/2 glass mix, cover and cook on low to medium flame till the meat is tender and oil seperates (add nigella seeds as well).

     5: then add the eggplant, water 1/2 cup mix, cover and simmer on low flame till gets tender.

     6: add green chili, fresh corainder, garam masala mix well.

     7: serve hot with roti, rice.
