1: heat oil in a pan add the cumin seeds, garlic and onions fry on high flame till gets light golden colour.2: then add tomatoes, red chilli, salt, turmeric mix well and cook till the oil comes on surface.3: now add the potatoes and water 1/2 cup wait for the boil and cover and cook on low to medium till the water dries and the potatoes are cooked.4: then add the bell peppers and fenugreek leaves mix well cover and cook for further 4 to5 minutes on low to medium.5: now add the garam masala and green chilli and serve hot with paratha or roti.
