Lahori Mutton Chops Masala

Ingredients

- 3/4 cup clarified butter (ghee)

- 2 large onions, ground

- 1 kg mutton chops

- 1 1/2 tbsp crushed garlic

- 3 large tomatoes, ground

- 2 heaped tsp coriander powder

- 1 1/2 tsp cumin seeds, dry roasted and crushed

- 1 1/2 tsp red chili powder

- 1 tsp turmeric powder

- 1 1/2 tsp salt

- 1 1/2 tsp paprika powder

- 1 cup yogurt

- 1 tsp garam masala powder

- 1/3 cup cream

- 2-inch piece ginger, julienne cut

- 4 bullet green chilies, sliced

- 1 tbsp dry fenugreek leaves (Kasuri methi)

- Handful of fresh coriander leaves

  1. Step 1: Fry the Onions

    1. Heat 3/4 cup of clarified butter in a large pan over medium heat.

    2. Add the ground onions and fry until golden brown.

     

    Step 2: Cook the Mutton Chops

    3. Add 1 kg of mutton chops to the pan and fry on high flame until the color changes.

    4. Add 1 1/2 tbsp crushed garlic and fry with the chops for 3-4 minutes.

     

    Step 3: Add Spices and Tomatoes

    5. Add the ground tomatoes, 2 heaped tsp coriander powder, 1 1/2 tsp crushed cumin seeds, 1 1/2 tsp red chili powder, 1 tsp turmeric, 1 1/2 tsp salt, and 1 1/2 tsp paprika powder to the pan. Mix well and cook on high flame for 4 minutes.

     

    Step 4: Incorporate Yogurt

    6. Add 1 cup of yogurt to the mixture, mix well, and cook on high flame for 7-8 minutes.

     

    Step 5: Simmer the Mutton

    7. Add 1 1/2 large glasses of water (approximately 3 cups), mix, cover, and cook on low to medium flame until the meat is tender and the oil separates.

     

    Step 6: Final Touches

    8. Add 1 tsp garam masala powder, 1/3 cup cream, julienne-cut ginger, sliced green chilies, and 1 tbsp dry fenugreek leaves. Mix well and simmer on low flame for 7-8 minutes.

     

    Step 7: Garnish and Serve

    9. Add a handful of fresh coriander leaves, and mix well.

    10. Serve hot with naan, roti, or paratha.
