Achari Kabab Masala

Ingredients

For Achari Masala Powder:

1. Coriander seeds: 1 tbsp (heaped)

2. Cumin seeds: 1 tbsp (heaped)

3. Fennel seeds: 1 tsp (heaped)

4. Mustard seeds: 1 tsp

5. Chaat masala powder: 1 tsp (heaped)

6. Onion seeds: 1 tsp

7. Fenugreek seeds: 1/2 tsp

 

For Achari Green Chilli:

1. Chaat masala powder: 2 tbsp (heaped)

2. Lemon juice: 4 to 5 tbsp (enough to mix the chaat masala)

3. Bullet green chillies: 6

 

For Chicken Kababs:

1. Green chillies: 8

2. Ginger: 2-inch piece

3. Garlic: 10 cloves

4. Coriander powder: 2 tsp

5. Cumin powder: 1 1/2 tsp

6. Carom seeds: 1 tsp

7. Crushed red chilli: 2 tsp

8. Red chilli powder: 1 tsp

9. Turmeric: 1/2 tsp

10. Salt: 1 1/2 tsp

11. Egg: 1

12. Coriander leaves: Handful

13. Boneless chicken: 1 kg

 

For Achari Curry:

1. Oil: 1/2 cup

2. Onions: 2 large (ground)

3. Ginger & garlic paste: 1 1/2 tbsp

4. Turmeric: 1/2 tsp

5. Salt: 1 tsp

6. Paprika powder: 1 1/2 tsp

7. Red chilli powder: 1 1/2 tsp

8. Crushed red chilli: 1 1/2 tsp

9. Coriander powder: 1 tbsp

10. Tomatoes: 4 medium (ground)

11. Yogurt: 1 cup

12. Achari masala powder: 1 to 2 tbsp

13. Ginger: 2-inch piece (julienned)

14. Coriander leaves: Handful

  1. 1. Prepare Achari Masala Powder:

       - In a blender, grind coriander seeds, cumin seeds, fennel seeds, and mustard seeds.

       - Transfer the ground mixture to a bowl. Add chaat masala, onion seeds, and fenugreek seeds. Mix well and set aside.

     

    2. Prepare Achari Green Chillies:

       - Mix chaat masala powder with lemon juice to form a paste.

       - Stuff this paste into the bullet green chillies as shown in the video.

     

    3. Prepare Chicken Kababs:

       - Grind green chillies, ginger, and garlic together.

       - Transfer this mixture to a chopper. Add coriander powder, cumin powder, carom seeds, crushed red chilli, red chilli powder, turmeric, salt, egg, coriander leaves, and boneless chicken.

       - Blend everything until well combined. Cover and refrigerate the mixture for 1 hour.

     

    4. Form and Fry Kababs:

       - Grease your palms and shape the mixture into kababs.

       - Shallow fry the kababs on medium flame until golden brown on all sides. Set aside.

       - (You can freeze the kababs at this stage if desired.)

     

    5. Prepare the Achari Curry:

       - Heat oil in a pan. Add the ground onions and fry on high flame until they change colour.

       - Add ginger and garlic paste and fry for an additional 4 minutes.

     

    6. Cook the Curry:

       - Add turmeric, salt, paprika, red chilli powder, crushed red chilli, coriander powder, ground tomatoes, and yoghurt. Mix well.

       - Add 1 cup of water, cover, and cook on low to medium flame until the oil separates from the masala.

     

    7. Combine Kababs with Curry:

       - Add achari masala powder and mix well.

       - Add the fried kababs, 1/2 cup of water, julienned ginger, and stuffed green chillies. Simmer for 10 minutes.

     

    8. Finish and Serve:

       - Add chopped coriander leaves and mix well.

       - Serve hot with roti, paratha, or naan.
