- 1 teaspoon of garam masala powder for a final burst of flavour

- Start by creating a smooth masala paste in a blender, combining onion, ginger & garlic paste, tomatoes, green chilies, dry-roasted and crushed coriander seeds, Kashmiri chili powder, red chili powder, turmeric, salt, and garam masala powder. Grind until you achieve a velvety consistency.
- In a pan, heat oil and add bay leaves, star anise, black cardamom, cinnamon sticks, peppercorns, cloves, cumin seeds, and chopped onions. Sauté on high heat until the onions turn a golden hue.
- Introduce the mutton pieces, frying until they transform in colour, approximately 8 minutes over high heat.
- Pour in the masala paste, ensuring the meat is thoroughly coated. Allow it to cook for an additional 8 minutes on high heat, letting the flavours meld.
- Add 1 1/2 glasses of water, simmering on low to medium heat until the mutton achieves tenderness and the oil separates.
- Stir in the finely chopped fresh coriander leaves, cooking for an extra 3 minutes on high heat.
