Shahi Mutton Chops Masala

Ingredients

 For the Masala Powder:

 

 1. 1 tsp cumin seeds

 2. 2 pieces of cinnamon stick (broken into small pieces)

 3. 15 cloves

 4. 12 green cardamom

 5. 9 dry red chillies

 6. 2 tbsp almonds

 7. 3 large tomatoes

 

 Other Ingredients:

 

 8. 3/4 cup clarified butter

 9. 3 black cardamom

10. 1/2 tsp black peppercorns

11. 3 bay leaves

12. 1 star anise

13. 3 large onions (ground)

14. 2 tbsp ginger & garlic paste

15. 1 kg mutton chops

16. 1 & 1/2 tsp salt

17. 1 & 1/2 tsp red chilli powder

18. 1 tsp turmeric

19. 1 tsp Kashmiri powder (heaped)

20. 2 & 1/2 tsp coriander powder

21. 1 & 1/2 tsp cumin powder

22. 4 bullet green chillies (sliced)

23. 1 tsp garam masala powder

24. 1 & 1/2 tbsp kewra water

25. 4 tbsp fresh coriander leaves

Instructions

  1.  1. Dry roast cumin, cinnamon sticks, cloves, green cardamom, dry red chilli, and almonds on medium flame. Leave to cool.

     2. Transfer the roasted spices to a grinding mill and grind to a powder.

     3. In a blender, add tomatoes and the roasted powder. Grind to a smooth paste.

     4. Heat clarified butter, add black cardamom, black peppercorns, bay leaves, star anise, and onion. Fry on high flame until golden.

     5. Add ginger & garlic paste and fry for 5 minutes on high flame.

     6. Add the mutton chops and fry on high flame until the color changes.

     7. Then add salt, red chilli powder, turmeric, Kashmiri powder, coriander powder, cumin powder. Mix and cook on high flame for 8 minutes, stirring continuously.

     8. Add the tomato mixture and cook for 4 minutes on high flame.

     9. Then add 500ml water, mix, cover, and cook on low to medium flame until the meat is tender, and ghee separates.

    10. Add green chilli, garam masala powder, kewra water, and coriander leaves. Mix well.

    11. Serve hot with naan, roti, paratha, or puri. Enjoy your Shahi Mutton Chops Masala! ?????
