Aloo Masala Fry Recipe

Ingredients

 - 1/3 cup Cooking Oil

 - 1 1/2 tsp Cumin Seeds

 - 2 Large Onions (finely chopped)

 - 1 1/2 tbsp Chopped Garlic

 - 2 tbsp Chopped Ginger

 - 2 Green Chillies (chopped)

 - 2 tbsp Lemon Juice

 - 1 tsp Kashmiri Powder (heaped)

 - 1 tsp Red Chilli Powder

 - 1 tsp Turmeric

 - 1 1/2 tsp Salt

 - 1 tbsp Coriander Powder

 - 2 tsp Cumin Powder

 - 3 Large Tomatoes (ground)

 - 1 cup Water

 - 1/2 cup Yogurt (room temperature)

 - 1 tbsp Dry Fenugreek Leaves (heaped)

 - 1 Medium Onion (sliced)

 - 1 Medium Bell Pepper (deseeded & sliced)

 - 1 kg Potatoes (peeled, boiled with 1 tsp salt, and fried)

 - 1 tsp Garam Masala Powder

 - 4 tbsp Fresh Coriander Leaves

 - 1 Green Chilli (chopped)

 

 

Instructions

  1. Aloo Masala Fry Recipe

     1. Start with Cumin and Onions:

       - Heat 1/3 cup of cooking oil in a pan. Add 1 1/2 tsp of cumin seeds and fry until they sizzle. Then, add finely chopped onions and sauté until they become lightly golden over high flame.

     

     2. Add Aromatics:

       - Stir in 1 1/2 tbsp of chopped garlic, 2 tbsp of chopped ginger, and 2 chopped green chillies. Cook for about 3 minutes on high flame.

     

     3. Incorporate Tomatoes and Spices:

       - Add the ground tomatoes, 2 tsp of cumin powder, 1 tbsp of coriander powder, 1 tsp of salt, 1 tsp of turmeric, 1 tsp of red chilli powder, 1 tsp of Kashmiri powder, 2 tbsp of lemon juice, and 1 cup of water. Mix well, cover the pan, and cook on low to medium flame until the oil starts to separate.

     

     4. Introduce Yogurt:

       - Pour in 1/2 cup of room temperature yogurt, mix thoroughly, and cook until the oil separates again. Your masala is now ready.

     

     5. Combine Additional Ingredients:

       - Add 1 tbsp of heaped dry fenugreek leaves, sliced onion, sliced bell pepper, and fried potatoes. Mix well, cover, and simmer on low flame for 10 minutes.

     

     6. Enhance with Garam Masala and Coriander:

       - Finally, add 1 tsp of garam masala powder and 4 tbsp of fresh coriander leaves. Mix everything thoroughly.

     

     7. Garnish and Serve:

       - Garnish with chopped green chilli.

     

     8. Serve Hot:

       - Enjoy your flavorful Aloo Capsicum Curry with your choice of roti, paratha, or naan.
