Nando’s Spicy Rice

Ingredients

 1: oil 1/2 cup

 2: onion 1 medium (finely sliced)

 3: garlic 5 cloves (finely chopped)

 4: tomatoes 2 medium (chopped)

 5: turmeric 1/2 tsp

 6: paprika powder 1 & 1/2 tbsp

 7: red chilli powder 1 & 1/2 tsp

 8: salt 2 tsp

 9: cumin powder 1 tbsp

10: green chilli 3 (chopped)

11: peas 1/2 cup (frozen)

12: sweet corn 1/2 cup (canned)

13: bell peppers 3 small (deseeded & chopped)

14: lemon juice 2 tbsp

15: nando sauce 1/2 cup

16: rice 1 kg (washed)

17: salt 2 tsp

  1. 1: heat oil add onions and fry on high flame till it changes colour.

    2: then add garlic and sauté for a few seconds.

    3: add tomatoes, turmeric, paprika powder, red chilli powder, salt, and cumin powder mix add water 1/2 cup of and cook till tomatoes reduce and oil separates.

    4: now add green chilli, peas, sweet corn, bell peppers, lemon juice, and Nando sauce mix and cook for a few minutes.

    5: add the washed rice, salt, and water that should be 1 & 1/2 inches above the rice, cover and cook on high flame till the water dries.

    6: now place the pot on a tawa which should be heated in advance for 8 minutes on high flame, then lower the flame and simmer on low flame for 15 minutes.

    7: Served hot with Nando's Butterfly Chicken, coleslaw, fries, and cold drinks.
