Sikandari Biryani Recipe
Ingredients
1: oil 1/2 cup (heaped)
2: bay leaves 3
3: star anise 2
4: clove 8
5: black peppercorn 8
6: green cardamom 4
7: black cardamom 3
8: cinnamon sticks 3
9: cumin seeds 1 & 1/2 tsp
10: onions 2 large (finely sliced)
11: ginger & garlic paste 2 tbsp
12: mutton 1 kg
13: green chilli 3 (chopped)
14: crushed red chilli 2 tsp
15: garam masala powder 1 tsp
16: red chilli powder 2 tsp (heaped)
17: coriander powder 1 tsp
18: salt 2 tsp
19: tomatoes 4 large (grind)
20: yogurt 1 cup
21: rice 1 kg (boiled with salt 3 tbsp)
22: kewra water 2 tbsp (&) yellow food colour 1/2 tsp
23: green chilli 7
24: lemon slices of 1 lemon
25: fresh coriander handful

Sikandari Biryani Recipe
1: heat oil add bay leaves, star anise, cloves, black peppercorn, green cardamom, black cardamom, cinnamon sticks, cumin seeds, onions fry till gets golden.
2: add ginger & garlic paste and fry on high flame for 4 minutes.
3: now add mutton and fry the meat for 8 minutes on high flame.
4: then add green chilli, crushed red chilli, garam masala powder, red chilli powder, coriander powder, salt, tomatoes mix well and cook on high flame for 8 minutes.
5: add yogurt mix and cook further 8 to 10 minutes.
6: now add water 1 & 1/2 cup of water mix and lock the pressure cooker, once the weight moves time and cook the meat for 20 minutes, then open the pressure cooker and dry the extra water.(if cooking in a plan pot add 2 glass of water and cook on low to medium flame).
7: transfer the meat in a large pot, add the boiled rice, kewra water and food colour, green chilli, lemon slices, fresh coriander, cover the lid with a tea towel, first on high flame for 5 minutes and then for 15 minutes on low flame.
8: serve hot with salad, raita and cold drinks.
