Darbari Mutton Raan

Ingredients

 

 First Marination:

 1: mutton leg 1 & 1/2 kg

 2: raw papaya paste 4 tbsp

 3: salt 1 tsp

 

 Second Marination:

 1: cream cheese 1/2 cup

 2: yogurt 1 cup

 3: fried onions 1 cup

 4: cashew nuts 25

 5: green cardamom 1/2 tsp

 6: red chilli powder 2 tsp

 7: salt 2 tsp

 8: coriander powder 1 tbsp

 9: crushed black pepper 1 tsp

10: garam masala powder 1 tsp

11: nutmeg 1/2 tsp

12: mace 1/2 tsp

13: ginger & garlic paste

 

 Other Ingredients:

 1: oil 1/2 cup

 2: water 1 & 1/2 glass

 3: fries

 4: kewra water 

 

Instructions

  1. Darbari Mutton Raan

     1: on the mutton leg give deep gash and massage it with salt, raw papay paste and leave it for 2 hours.

     2: in a blender jug add all ingredients under second marination, grind to a smooth paste.

     3: transfer the paste of spices on the leg mix well and leave it for futher 2 hours.

     4: heat oil and fry the leg on boths sides for 8 minutes each.

     5: add the marination, water mix cover and cook on low to medium flame till the meat is tender, do change sides while cooking for even coking.

     6: to cook the mutton leg it took 2 hours.

     7: add kewra water.

     8: serve hot with fries, rice, naan.
