Aloo Phaliyan

Ingredients

 1: oil 1/3 cup

 2: cumin seeds 2 tsp

 3: green chilli 4 (finely chopped)

 4: garlic 1 tbsp (crushed)

 5: ginger 1 & 1/2 inch piece

 6: onion 1 large (finely chopped)

 7: potatoes 600g (pealed & cut in cubes)

 8: green beans 600g (cut n small pieces)

 9: coriander powder 2 tsp

10: salt 1 & 1/2 tsp

11: red chilli powder 1 & 1/2 tsp

12: turmeric 1/2 tsp

13: dry mango powder 1 tsp (heaped)

14: water 1 cup

15: dry fenugreek leaves 1 tbsp

16: garam masala powder 1 tsp

17: tomatoes 2 medium (chopped)

18: fresh coriander hand full

Instructions

  1.  1: heat oil add cumin seeds, green chilli, garlic, ginger and fry till gets golden.

     2: then add the onion and fry on high flame till gets soft.

     3: now add the potatoes, green beans, coriander powder, salt, red chilli powder, turmeric, mango powder mix well add 1 cup of water mix once again, cover and cook on low to medium flame till the potatoes are tender and oil separates.

     4: then add the dry fenugreek leaves, tomatoes, garam masala powder mix and simmer on low till the tomatoes reduce.

     5: add fresh coriander mix.

     6: serve hot with roti, paratha.
