Orange Cake

Ingredients

 1: eggs 2

 2: sugar 110g

 3: oil 100ml (vegetable)

 4: fresh orange juice 150ml

 5: vinegar 1 tsp

 6: plain flour 220g

 7: baking powder 1 tbsp

 8: yellow food color 1/4 tsp (optional)

 9: orange essences 1/2 tsp

10: mix peel 2 tbsp (mixed with) plain flour 1 tsp

 

 For Garnishing:

 1: jam 1 tbsp (warm in the microwave for 30 seconds)

 2: coconut 2 tsp

 3: almonds 7 (sliced)

  1.  Preheat Oven 15 Minutes Before at 350f, 180c, Gas Mark 4.

     1: in a bowl add eggs, and sugar and whisk till combined (you can use an electric beater).

     2: slowly add the oil and keep whisking.

     3: then add orange juice and beat.

     4: add vinegar, orange essences, plain flour, baking powder and beat till combined.

     5: then add food color and mix well.

     6: add the mixed peel and mix well.

     7: grease a cake tin and sprinkle coconut, transfer the batter.

     8: Place the cake tin in the oven on the middle rack and bake for 30 to 35 minutes or check with a knife comes out clean cake is done.

     9: leave to cool for 5 to 10 minutes and then remove it from the cake tin.

    10: brush jam, sprinkle coconut, almonds.

    11: serve with tea, or coffee and enjoy!
