Kalonji Baingan Recipe

Ingredients

 

 Dry Roast ingredients:

 1: cumin seeds 1 tbsp

 2: coriander seeds 1 tbsp

 3: fennel seeds 1 tbsp

 

 Other Ingredients:

 1: oil 1/2 cup

 2: eggplant 800g (cut in thick cubes)(baingan)

 3: tomatoes 500g (chopped)

 4: green chilli 5 (chopped)

 5: red chilli powder 1 tsp

 6: turmeric 1 tsp

 7: crushed red chilli powder 1 & 1/2 tsp

 8: salt 1 tsp

 9: nigella seeds 1 tsp (kalonji)

 10: fresh coriander 1 small bunch

 

Instructions

  1. Kalonji Baingan Recipe

     1: in a frying pan add cumin seeds, coriander seeds, fennel seeds and dry roast, then leave to cool and crush it coarsely.

     2: heat oil and fry the eggplant on high flame and then remove it.

     3: now in the same oil add the tomatoes, green chilli, red chilli powder, turmeric, crushed red chilli, salt, dry roasted and crushed masala, water 1/2 cup mix well and cook on medium flame till the tomatoes reduce and oil comes on surface.

     4: then add the fried eggplant, nigella seeds, green chilli, fresh coriander mix well and simmer on low flame for 5 minutes.

     5: serve hot with roti, naan.
