Fruit Cocktail Cake
Ingredients
For Cake
1: fruit cocktail 425g (1 can with the syrup)
2: vanilla essences 1 tsp
3: eggs 2
4: sugar 1 & 1/2 cup
5: selfraising flour 2 cups
For Frosting:
1: butter 113g
2: vanilla essences 1 tsp
3: evaporated milk 1 cup
4: desiccated coconut 1 & 1/2 cup
5: pecans 1 cup (chopped) or any nuts you like
6: sugar 1 cup

Fruit Cocktail Cake
1: in a bowl add the fruit cocktail, vanilla essences, eggs, sugar, self raising flour and beat till every thing s combined.
2: grease and flour an oven proof dish 9 by 13.
3: transfer the batter in the dish and place it n the middle rack of the oven and bake it for 35 to 45 minutes and check with a knife poke the cake it comes out clean the cake is done.
4: in a pan add butter, vanilla essences, evaporated milk, desiccated coconut, sugar, pecans and cook on medium flame for 1 to 2 minutes.
5: now add the frosting and spread evenly.
6: leave to cool completely.
