GOOEY BROWNIES RECIPE

Ingredients

1: salted butter 227g (melted and cooled)

2: vegetable oil 2 tbsp

3: brown sugar 1 cup & 2 tbsp 

4: sugar 1 cup & 2 tbsp 

5: eggs 4 (room temperature)

6: vanilla extract 4 tsp 

7: plain flour 1 cup  

8: unsweetened cocoa powder 1 cup

9: pecans 1/2 cup (chopped)

10: chocolate 270g (roughly chopped)

11: 8 by 8-inch square tin greased and lined with butter paper

  1. (Preheat the oven to 350f, 180c, gas mark 4.)

    1: in a large bowl combine melted butter, oil, and both sugars.

    2: add the eggs, and vanilla then whisk for about one minute until evenly combined.

    3: over the same bowl sift in the flour and cocoa powder & gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over mix). 

    4: fold in half of the chocolate chunks and nuts.

    5: pour the batter into the prepared pan, then smooth the top.

    6: bake for 3o to 45 minutes, or until the center of the brownies no longer jiggles and is just set to the touch.

    7: remove from the oven and allow to cool to room temperature before removing from the baking tray and slicing into 16 brownies. Enjoy!
