OATMEAL CAKE

Ingredients

For Cake:

 1: 1 & 1/2 cups hot water

 2: 1 cup oats

 3: 1 cup brown sugar

 4: 1 cup white sugar

 5: 115g butter (at room temperature)

 6: 2 eggs

 7: 1 & 1/3 cups plain flour

 8: 1 tsp cinnamon powder

 9: 1 tsp baking soda

 10: 1/2 teaspoon salt

 

 For Topping:

 1: 115g butter

 2: 1 cup brown sugar

 2: 3 tbsp milk

 3: 1 cup coconut or nuts (crushed)

 

Instructions

  1.  1: 9X13 inch baking dish grease well with butter.

     2: combine the hot water and the oatmeal and allow to soak.

     3: beat together the butter and both sugars.

     4: add in the eggs and beat till combined.

     5: in another bowl sieve together the flour, cinnamon, baking soda and salt.

     6: add half of the flour to the creamed butter mixture, followed by the soaked oatmeal beat well, then the remaining   flour and beat once again till combined. 

     7: transfer the batter into the prepared baking dish bake or 35-40 minutes or till done.

     

     For The Topping:

     1: combine the butter, brown sugar and milk in a saucepan, bring to a boil, while stirring, boil for one minute.

     2: add in the coconut or nuts. 

     3: pour over the cake & spread it on the cake.

     4: leave to cool completely.

     5: serve and enjoy.
