Ingredients

 For Marination:

 1: boneless chicken thighs 1 kg (use a meat hammer and beat it so it gets flat)

 2: Thick Greek yogurt 570g

 3: lemon juice 60ml

 4: olive oil 180ml

 5: salt 1 tbsp

 6: garlic 1 tbsp (crushed)

 7: coriander powder 1 tbsp

 8: red chilli powder 1 & 1/2 tsp

 9: cumin powder 1 tbsp

 10: cinnamon powder 1 tsp

 11: black pepper powder 1 tsp

 12: paprika powder 1 tbsp

 

Required:

 1: onion 1 large (cut in half)

 2: skewer 1 or as many as required (use the thick ones and soak in water for 30 minutes)

 3: baking tray

 

Tzatziki Sauce:

 1: cucumber 1 large (grated & squeeze the water out)

 2: Thick Greek yogurt 570g

 3: garlic 1 tbsp (crushed)

 4: dill 2 tbsp (fresh)

 5: coriander 2 tbsp (fresh)

 6: salt 1/2 tsp or (to your taste)

 

For Sandwich:

 1: pita naan

 2: lettuce

 3: onions 

 4: Tomatoes

Instructions

  1. 1: on a cutting board, place a piece of plastic wrap over the chicken thighs and pound until about 1/2 inch thick with a meat mallet, rolling pin, or heavy pan.

    2: in a large bowl, combine marinade ingredients, and chicken and stir well, cover and keep in the fridge for 2 hours or keep it overnight.

    3: preheat oven to 400∞F, 200∞C, gas mark 6.

    4: grate the cucumber, be sure to squeeze out any excess liquid.

    5: in a medium bowl, combine tzatziki ingredients and stir well, cover and refrigerate for at least 30 minutes.

    6: on a baking sheet or a large cast-iron skillet, use the onion half as a base and position the skewer vertically like a spit, skewer the chicken thighs individually, rotating each one 90 degrees.

    7: bake for 2 hours and keep moving it so it cooks evenly in the oven.

    8: take the liquid from the tray add the remaining marination and cook it on low flame till the oil comes on the surface.

    9: let cool for 10 minutes.

    10: carve off slices of chicken to fill a pita, then mix the chicken in the cooked curry.

    11: add the tzatziki sauce to the naan add the salad, chicken, and tzatziki sauce.

    12: serve hot with fries and a cold drink of your choice.
