BROCCOLI CREAM SOUP

Best Season: Suitable throughout the year

Ingredients

1: fresh broccoli 360 (finely chopped)

 2: chicken stock (3 cubes of chicken knorr mixed with 6 cups of hot water) or (boil 1/2 kg chicken with water to make stock)

 3: onion1 medium (finely chopped)

 4: carrot 1 medium (grated)

 5: garlic 2 pieces (chopped)

 6: unsalted butter 30g

 7: plain flour 1/3 cup

 8: salt 1/2 tsp

 9: black pepper powder 1 tsp

 10: milk 1 cup

 11: cream 1 cup

 12: cheddar cheese 1 & 1/2 cup

Instructions

  1.  1: in a large pot add chicken stock, broccoli, carrot, onion, and garlic mix and cook on low to medium flame for 15 minutes, till the vegetables get soft, keep aside.

     2: in a large pot melt butter add the plain flour and fry for 2 minutes, on medium flame.

     3: then add salt, black pepper, milk, and cream and whisk so there are no lumps, on medium flame.

     4: now add the broccoli soup mixture, mix and grind to a smooth paste.

     5: place it in a pot and cook till gets thick, then add cheese and mix and cook again for 5 minutes, on high flame.

     6: serve hot with garlic bread, and bread with butter.

    NOTE: it is your choice to make chicken stock or use chicken knorr cubes. salt can be used to your choice.
