Chilli Chicken Rice Platter

Ingredients

 

 For Chicken Marination:

 1: boneless chicken 1 kg (cut in strips)

 2: plain flour 4 tbsp

 3: corn flour 2 tbsp

 4: black pepper powder 1 & 1/2 tsp

 5: salt 1 & 1/2 tsp

 6: crushed red chilli 2 tsp

 7: ginger & garlic paste 1 tbsp

 8: oil 3 tbsp

 9: vinegar 1 tbsp

 10: dark soya sauce 1 & 1/2 tbsp

 11: hot sauce 2 tbsp

 12: eggs 2 (or) water 1/3 cup

 

 For Curry:

 1: oil 3 tbsp

 2: garlic 1 tbsp (crushed or grated)

 3: knorr chicken cube 1 mixed with 1 cup hot water

 4: vinegar 1 tbsp

 5: dark soya sauce 1 & 1/2 tbsp

 6: crushed black pepper 1 tsp

 7: salt 1/2 tsp

 8: tomato ketchup 1/2 cup

 9: green chilli 12 (cut in half)

 

 For Scrambled Eggs:

 1: eggs 8

 2: salt 1/2 tsp

 3: crushed black pepper 1 tsp

 4: oil 3 tbsp

 

 For Rice:

 1: rice 1 kg (boiled 80% with salt 2 tbsp, yellow food colour 1 tsp)

 2: garlic 1 tbsp (crushed or grated)

 3: oil 4 tbsp

 4: frozen peas 1 cup

 5: sweet corn 1 cup

 6: bell peppers 2 small (cut in small pieces)

 7: carrots 3 medium (grated)

 8: vinegar 1 & 1/2 tbsp

 9: dark soya sauce 2 tbsp

 10: salt 1 tsp

 11: black pepper powder 1 tsp

 12: crushed red chilli 2 tbsp

 

Instructions

  1. Chilli Chicken Rice Platter

     

     1: in a bowl add all ingredients under marination, mix well and leave aside for 1 hour.

     2: heat oil and add the chicken pieces and fry till chicken is tender and golden on medium flame, remove and keep on paper towel.

     3: for curry: heat oil add garlic and fry on high flame.

     4: now add chicken stock, vinegar, dark soya sauce, crushed black pepper, salt, tomato ketchup mix and cook on high flame till gets thick.

     5: then add the fried chicken, green chilli mix well to coat the chicken in the sauce and keep aside.

     6: for scrambled eggs: in a bowl beat eggs, salt, pepper, heat oil and add the mixture and cook the eggs as shown in the video.

     7: for rice: heat oil add garlic and fry on high flame.

     8: now add peas, sweet corn, bell peppers, carrots, vinegar, dark soya sauce, salt, black pepper, crushed red chilli, mix on high flame and add scrambled eggs, boiled rice mix well and simmer the rice for 15 minutes.

     9: to serve use a bundt pan, press the rice and then place it upside down, add the chicken in the middle.

    10: serve hot and enjoy.
