ARVI BAINGAN RECIPE

Ingredients

 1: colocasia (Arvi) 200g (peeled & add salt 1/2 tsp mix well and leave it for 1 hour, then wash and pat dry) (in ENGLISH it is called colocasia)

 2: eggplant (baingan) 300g (cut in strips and keep in water) (in ENGLISH it's called brinjal as well)

 3: tomatoes 2 medium (sliced)

 4: onions 2 medium (finely sliced)

 5: Bullet green chillies 2 (sliced)

 6: lemon juice 2 tbsp

 7: cumin seeds 1 tsp

 8: dry roasted cumin seeds 1 & 1/2 tsp

 9: red chill powder 1 tsp

 10: coriander powder 1/2 tsp

 11: salt 1/2 tsp

 12: garam masala powder 1/2 tsp

 13: turmeric powder 1/4 tsp

 14: ginger & garlic paste 1 tbsp

 15: oil 1/2 cup

 16: fresh coriander 3 tbsp

  1. 1: heat oil and fry the colocasia (Arvi) on high flame till gets a golden colour, then take it out and keep aside.

    2: now in the same oil, heat it and add the cumin seeds, onions and fry till gets soft, then add the ginger & garlic paste and fry till gets golden.

    3: add salt, coriander powder, red chilli powder, turmeric, dry roasted cumin, eggplant (baingan), and tomatoes mix well, then add water 3/4 cup, cover and cook on medium flame for 5 minutes.

    4: add the fried colocasia (Arvi) mix, cover and simmer on slow flame till the baingan is completely soft.

    5: now add the lemon juice, garam masala powder, fresh coriander, and green chilli mix well.

    6: Serve Hot with Roti.
