Adarki Aloo Gobi

Ingredients

1: oil 1/3 cup

2: onion 1 medium (sliced finely)

3: ginger 1 & 1/2 inch (Julian cut)

4: cumin seeds 1 & 1/2 tsp

5: black cardamom 2

6: cinnamon stick 2-inch piece

7: ginger & garlic paste 1 & 1/2 tsp

8: green chilli 3 (sliced)

9: tomatoes 2 medium (sliced)

10: salt 1 tsp (heaped)

11: red chill powder 1 tsp (heaped)

12: turmeric 1/2 tsp

13: potatoes 400g (peeled and cubed)

14: cauliflower 500g (cut into small pieces)

15: water 1 cup

16: yogurt 2 tbsp

17: dry fenugreek 1 tbsp

18: green chilli 4

19: ginger 1-inch pieces(Julian cut)

20: garam masala powder 1/2 tsp

  1. 1: heat oil add onion and fry till it gets soft, on high flame.

    2: add ginger, cumin seeds, black cardamom, cinnamon stick, ginger & garlic paste mix and fry it for 2 minutes on high flame.

    3: now add green chili, tomatoes, salt, red chili powder, turmeric, and water mix, cover, and cook on medium flame till the oil comes on the surface and the tomatoes reduce.

    4: then add potatoes, cauliflower, and water mix well and wait for a boil on high flame, then cover and cook on low to medium flame till the water dries and the vegetables are tender.

    5: add yogurt mix and cook on high flame till the oil comes on the surface.

    6: now add dry fenugreek leaves, green chili, ginger, garam masala powder mix and simmer on low flame for 4 minutes.

    7: Served hot with roti, or paratha.
