Dhuan Masala Chicken
Ingredients
Marination:
1: chicken 1 kg
2: red chilli powder 1 & 1/2 tsp
3: turmeric 1/2 tsp
4: coriander powder 2 tsp
5: salt 1 & 1/2 tsp
6: yogurt 1/2 cup
For Curry:
1: oil 3 tbsp
2: black peppercorns 10 to 15
3: star anise 1
4: cloves 12
5: cumin seeds 2 tsp
6: black cardamom 3
7: cinnamon stick 2-inch piece
8: green cardamom 7
9: dry red chilli 5
10: ginger 3 inch
11: garlic 15
13: onions 3 medium
14: tomatoes 4 large
15: nutmeg 1/2 tsp
16: mace 1/2 tsp
17: oil 1 cup for cooking
18: fresh coriander handful
19: green chilli 4
20: coal to smoke the curry
Instructions

1: marinate chicken with the ingredients under marination, mix well and leave it for 1 hour.
2: heat oil 3 tbsp add black peppercorn, star anise, cloves, cumin seeds, black cardamom, cinnamon stick, green cardamom, dry red chilli, ginger, garlic, and onions and fry on high flame till the onions get soft.
3: then add tomatoes, nutmeg, and ace and cook further till the tomatoes get soft, then leave to cool and grind to a smooth paste.
4: in a pot add oil, and ground masala mix and cook till the oil comes to the surface on high flame.
5: now add the marinated chicken and cook till changes colour on high flame.
6: add 1/2 cup water to the chicken mix well, wait for a boil on high flame then cover and cook on low to medium flame till the chicken is tender and oil comes on surface.
7: now add fresh coriander, and green chilli mix and smoke the chicken as shown in the video.
8: Served hot with naan, or roti.
