3 Special Chicken Patties Recipes

Ingredients

1: PUFF PASTRY DOUGH ( Ingredients 1 )

 1: water 100 ml

 2: plain flour 220g
 
 3: unsalted butter 40g(to knead the flour)
 
 4: salt 1/2 tsp
 
 5: lemon juice 3 to 4 drops
 
 6: butter 180g
 
 7: extra flour to dust the surface and mix the 180g butter
 
 8: cling film
 
 
 
 
 
 2: CHICKEN CHEESE PATTIES ( Ingredients 2 )
 
 1: chicken breast 1 large (boiled & shredded)

 2: onion 1 medium (finely chopped)

 3: bell pepper 1 small (deseeded finely chopped)

 4: Cheddar cheese 1 cup (grated)

 5: milk 1 cup

 6: plain flour 2tbs

 7: unsalted butter 2tbs

 8: salt 1ts

 9: black pepper powder or crushed 1tsp (heaped)

 10: readymade puff pastry 2 pack (320g each) or check my home made PUFF PASTRY

 11: egg 1 or 2

 

 

 

 3: BREAD PATTIES RECIPE ( Ingredients 3 )

 1: chicken boneless 1 & 1/2 cup (boiled & shredded) 

 2: mushrooms 285g can (finely chopped)

 3: sweet corn 1/2 tbsp

 4: butter 50g

 5: flour 4 tbsp

 6: milk 1 cup 

 7: stock 1/2 cup (made with water & 1 knorr cube)

 8: salt 1/2 tsp 

 9: black pepper powder 1/2 tsp

 10: crushed red chilli 1 tsp

 11: bread slices as required

 12: eggs 1 beaten (as many required)

 13: bread crumbs as required

 

 14: oil for frying

 

Instructions

  1. 1: PUFF PASTRY DOUGH ( Recipe 1 )

     1: in a bowl add flour, melted butter, lemon juice, salt, water mix and make the dough, then on the working surface knead it for a minute, cover and keep in the fridge for 10 minutes.

     
     2: in a bowl add the butter and sprinkle 1 tbs flour crush the butter with a rolling pin, add 1 tbs more flour make a square shape of the butter, cover and keep in the fridge for 10 minutes.
     
     3: after 10 minutes, take the dough and butter out of the fridge.
     
     4: dust the working surface and place the dough on it roll the side of the dough make a star shape and leaving the middle a lump will form in the middle.
     
     5: place the butter in the middle and fold the sides to cover the butter very well.
     
     6: with the rolling pin press on the dough that the butter spreads evenly, then roll it in a rectangle shape(do not press hard on the dough as the butter may come out)
     
     7: now fold it cover and keep in the fridge for 10 minutes.
     
     8: after 10 minutes again press the dough with the rolling pin and the roll it to a rectangle shape, fold again cover and keep in the fridge(do not forget to dust the working surface every time you roll the puff pastry)
     
     9: repeat this again twice and  the puff pastry is ready to use.
     
     Note: always dust the working surface, keeping in the fridge, make sweet and savoury, can be kept in the fridge for 3 to 4 days and more than a month in freezer.
     
     
     
     
     
     
    2: CHICKEN CHEESE PATTIES ( Recipe 2 )
     
    1: boil chicken and shred keep aside.

    2: melt butter in a pan add onion and cook till gets soft on high flame.

    3: add flour, salt, black pepper and cook for 2 minutes.

    4: then add milk mix well so that they are no lumps on low flame and cook till gets thick.

    5: now add the chicken mix and leave it to cool completely.

    6: once cooled add cheese, bell pepper mix well.

    7: preheat oven 375f, 190c, gas mark 5.

    8: beat egg for brushing.

    9: dust the working surface with flour and place the puff pastry and cut it with a cutter (for 10 patties you need 30 cut pieces).

    10: brush one piece with egg add a tsp of chicken mixture, then place the second piece of puff pastry brush with egg & repeat for the third piece, press it down slightly to seal the sides now brush egg.

    11: bake for 25 to 30 minutes or till puffs up and is golden.

    12: serve hot.

     

     

     

    3: BREAD PATTIES RECIPE ( Recipe 3 )

     1: in a pan melt butter add, flour, salt, black pepper, crushed red chilli mix and cook for a minute, on medium flame.

     2: then add stock use a whisk, add milk mix and cook on high flame till gets thick.

     3: add in shredded chicken, sweet corn, mushroom mix well and leave it to cool completely.

     4: cut bread slices with round cutter.

     5: apply paste on round slices of bread & cover with 2nd piece of round bread, dip in egg, roll in crumbs.

     6: heat oil.

     7: deep fry in fry pan till gets golden, on high flame, keep on paper towel.

     8: serve hot with ketchup.

     

     

     NOTE: CAN STORE THE MIXTUR IN FRIDGE FOR A WEEK, IN AIR TIGHT BOX.
