AMRITSARI ALOO
Ingredients
1: potatoes 1 kg & 250g (boiled)
2: potatoes 250g (boiled & mashed)
3: tomatoes 5 medium (grind)
4: garam masala powder 1 tsp
5: onion seeds 1 tsp
6: fenugreek seeds 1/2 tsp
7: fennel seeds 2 & 1/2 tsp
8: red chilli powder 1 & 1/2 tsp
9: salt 1 & 1/2 tsp
10: curry leaves 15 to 20
11: turmeric 1/2 tsp
12: green chilli 3 (chopped)
13: oil 1/2 cup
14: fresh coriander 4 tbsp
Instructions

1: heat oil add fennel seeds, fenugreek seeds, onion seeds, green chilli, tomatoes, curry leaves, red chilli powder, salt, turmeric and cook on medium flame till the oil comes on surface.
2: add the mashed potatoes mx well and them add cubed boil potatoes 1 & 1/2 cup of water, mix and cook on medium flame till the oil comes on surface.
3: then add fresh coriander, green chilli, garam masala mix.
4: serve hot with roti, paratha.
