SPICY CHICKEN MUFFINS

Ingredients

1: Flour 2 1/2 cups

2: Baking Powder 2 tsp

3: Baking Soda 1/2 tsp

4: Salt 1 tsp

5: Black Pepper Powder 1 tsp

6: Butter 4 Tbsp melted

7: Eggs 2 lightly beaten

8: Cheddar cheese 1/2 cup grated

9: Butter Milk 3/4 cup

10: Sweet Corn Cream 1 can

11: Boiled and Shredded chicken 1 cup

12: green chilli 2 (finely chopped)

13: Cheddar Cheese extra for topping

14: Paprika Powder or red chili powder for sprinkling

Instructions

  1. SPICY CHICKEN MUFFINS

    1: Pre-heat oven at 180c, 350f, gas mark 4.

    2: Grease a cupcake tray with oil.

    3: Stir together flour, baking powder, baking soda, salt and black pepper together. 

    4: Add Cheddar cheese, shredded chicken, buttermilk, eggs, sweet corn, and melted butter to the flour mixture and mix well.

    5: Divide this mixture between cups in the cupcake tray.

    6: bake for 20 to 25 minutes or until risen and golden brown.

    7: then take out & sprinkle with extra cheddar cheese, red chili, or paprika powder. Bake until the cheese melts.

    8: serve hot.
