RESHMI CHICKEN BIRYANI

Ingredients

For Marination:

 1: boneless chicken 1 kg (cut into 2-inch cubes)

 2: coconut milk powder 4 tbsp or coconut milk 1/2 cup

 3: ginger & garlic paste 2 tbsp

 4: green chilli paste 2 tbsp

 5: red chilli powder 1 tsp

 6: coriander powder 1 tbsp

 7: salt 1 tsp

 8: cumin seeds 2 tsp (dry roasted & crushed)

 9: garam masala powder 1 tsp

 10: Thick Greek yoghurt 1 & 1/2 cups

 11: onions 2 large (grind to a paste)

 12: oil 1 cup

 

For Rice:

 1: rice 750g (boiled 80% with 3 tbsp salt)

 2: kewra water 2 tbsp

 3: yellow food colour 1/4 tsp

 4: Bullet green chilli 4 (sliced)

 5: fresh coriander hand full

  1. 1: in a bowl add chicken with all ingredients under marination (except onion & oil) mix well and leave it for 30 minutes.

    2: heat oil add the onion paste and fry on high flame till it changes colour.

    3: now add the marinated chicken mix, wait for a boil on high flame, then cover and cook on low to medium flame till the oil comes on the surface and the chicken is cooked.

    4: then add green chilli, and fresh coriander mix and close the flame.

    5: in a large pot add the curry, boiled rice, kewra water & colour mixture, cover and cook on high flame for 5 minutes and then simmer on low flame for 5 minutes.

    6: serve hot.
