QUICK MASALA CHICKEN RICE

Ingredients

1: chicken breast 1 kg (cut in strips)

 2: tomatoes 7 large (sliced)

 3: ginger & garlic paste 1 & 1/2 tbsp

 4: red chilli powder 1 tsp

 5: turmeric 1/2 tsp

 6: cumin seeds 1 & 1/2 tsp (dry roasted & crushed)

 7: salt 1 & 1/2 tsp

 8: dry fenugreek leaves 2 tsp

 9: fresh ginger 1 inch (Julian)

 10: bullet green chilli 3 (chopped)

 11: sweet corn 1 cup

 12: bell pepper 1 large (cut in small cube)

 13: food colour red, green, yellow (1/4 tsp mixed with 1 tsp of water)

 14: rice 1/2 kg (90% boiled with salt 2 tbsp)

 15: oil 1/2 cup

 16: fresh coriander 1/2 cup

Instructions

  1. QUICK MASALA CHICKEN RICE

     1: heat oil add ginger & garlic paste and fry for 1 & 1/2 minutes, on high flame.

     2: then add the tomatoes, salt, red chilli, turmeric, roasted cumin mix and cook till the tomatoes soften, on high flame.

     3: add the chicken and cook till changes colour, then add ginger, dry fenugreek, sweet corn mix & cook on medium to  high flame till the oil comes on the surface.

     4: then add bell peppers, green chilli, fresh coriander mix, simmer on low flame for 2 to 3 minutes.

     5: add the colours on the rice and mix it.

     6: transfer the rice on a large dish and add the chicken curry in the middle, garnish it with green chilli, coriander.

     7: serve hot and enjoy
