MOTI PILAU

Ingredients

For Moti:

 1: chicken mince 1 kg

 2: bread crumbs 1/2 cup

 3: salt 1 tsp

 4: cumin seeds 2 tsp (dry roasted & crushed)

 5: egg 1

 6: ginger & garlic paste 1 tbsp

 7: turmeric 1/2 tsp

 8: red chilli powder 1 tsp

 9: fresh coriander 1/3 cup

 

 For Pilau:

 1: rice 1 kg (washed & soaked for 20 minutes)

 2: thick greek yogurt 1/2 cup

 3: onion 1 large (finely sliced)

 4: tomatoes 5 medium (sliced)

 5: salt 2 & 1/2 tbsp

 6: Chinese salt 2 tsp

 7: crushed red chilli 1 & 1/2 tbsp

 8: turmeric 1/2 tsp

 9: cinnamon stick 2

 10: black pepper corn 15

 11: black cardamom 3

 12: cloves 8

 13: cumin seeds 1 tsp

 14: green cardamom 5

 15: bullet green chilli 4

 16: ginger & garlic paste 2 tbsp

 17: oil 1 cup

 18: water as much required for making rice

 

 For Garnishing:

 1: almonds 10 (sliced)

 2: pistachios 15 (sliced)

 3: chandi ka warq

Instructions

  1. MOTI PILAU

     1: in a bowl add chicken mince with all ingredients under moti, mix well lightly grease your palms & make small balls.

     2: heat oil and fry the balls till light golden, on medium to high, then place them one paper towel, keep aside.

     3: heat oil 1 cup add cinnamon stick, cloves, cumin, black pepper corn, black cardamom, green cardamom, onion,  ginger & garlic paste and fry till golden, on high flame.

     4: now add tomatoes, crushed red chilli, salt, Chinese salt, turmeric cook till the oil comes on the surface and the  tomatoes reduce, on high flame.

     5: then add yogurt and cook on high flame the oil comes on the surface, on high flame.

     6: add rice, water, green chilli and cook on high flame till the water dries, then cover the lid and simmer rice for 10 to 15  minutes, on low flame.

     7: to serve add rice on a platter add the fried chicken balls, almonds, pistachio, chandi warq.

     8: serve hot.
