POKE PINEAPPLE CAKE

Ingredients

For Cake:

 1: plain flour 2 cups

 2: sugar 2 cups

 3: eggs 2

 4: vanilla essences 1 tbsp

 5: baking soda 1 tsp

 6: crushed pineapple can 1 (567g)

 7: salt 1/4 tsp

 8: cake dish 9 by 13 greased

 

 For Frosting:

 1: pecans 1 cup (chopped)

 2: desiccated coconut 1 cup

 3: sugar 1 cup

 4: salted butter 110g

 5: evaporated milk 200ml

Instructions

  1. POKE PINEAPPLE CAKE

     Preheat Oven 350f, 180c, gas mark 4.

     

     1: in a bowl add plain flour, sugar, pineapple, salt, baking soda, vanilla, eggs and beat till combined.

     2: transfer the batter in the greased dish and bake for 30 to 40 minutes or until a wooden toothpick, inserted comes out  clean.

     3: to make frosting: in a pan add evaporated milk, sugar, butter and cook on high flame till the butter and sugar melts,  keep stirring, then cook on medium to high till gets little thick.

     4: then add the pecans, coconut mix and keep aside.

     5: once the cake is baked make holes and spread the frosting, leave to cool.

     6: cut in slices and serve.

     

     NOTE: My mistake i said (condensed milk) it is (evaporated milk) for the frosting.
