Ingredients

 For cooking mutton:

 1: mutton leg 1 & 1/2 kg (cut in large pieces)

 2: black peppercorns 10

 3: cloves 8

 4: green cardamom 10

 5: salt 2 tbsp

 6: fresh ginger 2 tbsp (crushed)

 7: fresh garlic 1 & 1/2 tbsp (crushed)

 8: yogurt 1 & 1/2 cups

 9: water 5 cups

  1. DANDA BIRYANI

     For assembling:

     1: boiled rice 750g (75% with salt 3 tbsp)

     2: save the water of the boiled rice about 1/2 cup

     3: save mutton stock 1 cup

     4: ghee 1/2 cup

     5: fresh mint 1 small bunch

     6: Thick Greek yogurt 2 cups

     7: food color yellow 1/4 tsp

     8: kewra water 3 tbsp

     9: saffron a few strands

     10: green chilli 20 (chopped)

     11: mace 1 tsp

     12: fresh ginger 2-inch piece (Julienne cut)

     13: green chilli 4 (for garnishing)
