MARSHMALLOWS (homemade)

Ingredients

 1: 3 packages unflavoured gelatin

 2: 2 cups granulated sugar

 3: 1 cup light corn syrup

 4: 1/4 teaspoon salt

 5: 1 tablespoon pure vanilla extract

 6: 1 cup Confectioners sugar for dusting

 7: 1 cup corn flour for dusting

 8: water 1 cup

Instructions

  1. Grease The 9 by 9 inch Tray

     

     1: Combine the gelatine and 1/2 cup of cold water in the bowl.

     2: Meanwhile, combine the sugar, corn syrup, salt, and 1/2 cup water in a small saucepan and cook over medium heat  until the sugar dissolves. Raise the heat to high and cook until the syrup reaches 240 degrees on a candy  thermometer. Remove from the heat.

     3: With the mixer on low speed, slowly pour the sugar syrup into the dissolved gelatine. Put the mixer on high speed  and whip until the mixture is very thick, about 15 minutes. Add the vanilla and mix thoroughly.

     4: Pour the marshmallow mixture into the pan. Allow to stand uncovered overnight until it dries out.

     5: dust the working surface with the powder sugar and corn flour mixture.Turn the marshmallows onto a board and cut  them in squares with a greased knife. Dust them with remaining confectioners’ sugar and corn flour.

     6: serve and enjoy.
