TOMATO KETCHUP

Difficulty: Beginner

Ingredients

1: tomatoes 2-1/2 kg

2: sugar 250g
 
3: Vinger 1 cup
 
4: onion 1 small (cut into 4 pieces)
 
5: fresh ginger 2 inch (cut in 2 pieces)
 
6: cumin seeds 1 tsp
 
7: cinnamon stick 2 pieces
 
8: black peppercorns 8
 
9: cloves 8
 
10: black cardamom 3
 
11: salt 1 tsp
 
12: red chilli powder 1 tsp

  1. TOMATO KETCHUP

    1: make a bundle with muslin cloth add onion, ginger, and the whole spices and keep aside.

    2: wash and cut the tomatoes.
     
    3: add the tomato spice bundle to a large pot, and cook on high flame till the tomatoes release water.
     
    4: once the tomatoes release water cook on low to medium covered till the tomatoes get mushy.
     
    5: now remove the spice bundle but first squeeze the juices out, wash it, and keep it aside as will be used again.
     
    6: grind the tomatoes, and sieve them to remove the seeds and skin.
     
    7: Place the grinned tomatoes in a clean large pot, now add salt, sugar, red chili, vinegar, and the spice bundle mix and cook on low to medium flame till the sauce gets thick.
     
    (TO SEE IF THE SAUCE IS READY ADD A SPOON FULL ON A PLATE, IF U SEE WATER ON THE SIDE OF THE SAUCE THEN COOK A LITTLE MORE).
     
    8: now remove the spice bundle, add the tomato ketchup to the sterilized jars, leave to cool down, and keep it in the fridge    (USE FOR A MONTH).
     
    9: sterilize jars by washing them with soap water, boil them in boiling water, and leave them to dry.
