ORIGNAL SAMOSA MEETHI CHUTNEY

Ingredients

1: Sugar 1kg

2: water 3 1/2 pints  ( 2 Liters) 
  
3: crushed red chilli 1/2 tsp
 
4: salt 1 tsp
 
5: yellow food color 1/2 tsp
 
6: Tamarind (imli) 1/4 cup
 
7: corn flour 2 to 3 tbs

Instructions

  1. 1: in a pan add water, and sugar and cook till the sugar dissolves on high flame.  

    2: now add the Tamarind (imli), mash it with your hands, and cook for 20 to 25 minutes on high flame.
     
    3: then strain the water and discard the pulp.
     
    4: add the water back into the pan and add salt, red chili, and food color mix and cook for a further 20 minutes on high flame.
     
    5: dissolve the corn flour with a little water, make sure there are no lumps, then add it to the sauce slowly to see how thick you want to make it.
     
    6: now cook for a further 20 minutes on medium flame, if gets thick fast close the flame.
     
    7: leave to cool.
     
    8: use with samosas.
